Beetroot Burgers

Beetroot Burgers

Serves: makes about 6 burgers Cooking Time: 40 mins

Ingredients

  • 4 small organic beetroots (pre-cooked, vaccuum packed)
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup oats (process into flour in your food processor)
  • 2 cans black beans
  • 1/4 cup raisins
  • 2 tsp wholegrain mustard
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp coriander
  • 1/2 tsp thyme
  • Coconut oil for cooking

Instructions

Grate the beetroots and strain as much liquid as possible

Sautee onion and garlic in some coconut oil until golden, add the grated and strained beetroots and fry for another minute or so and then set aside

Gently pulse the black beans and the raisins in your food processor to roughly mash them up

Transfer all ingredients to a mixing bowl and mix properly

Form into patties and fry patties on each side in coconut oil until nicely browned
