Chickpea Burgers

Serves: 11 burgers Cooking Time: 45 minutes


  • 1 large carrot (grated)
  • 1 large mushroom (grated)
  • 2 tins chickpeas (drained and rinsed)
  • 2 cloves garlic (minced)
  • 1 tsp cumin
  • 1 tsp turmeric
  • salt and pepper
  • handful fresh coriander
  • 3 tbsp grated parmesan
  • 1 free range egg
  • 3-4 tbsp oat flour (make your own by blending oats till it reaches a flour like consistency)



Place the chickpeas, garlic, turmeric, cumin, salt, pepper and coriander in a blender and pulse a few times to mash the chickpeas up roughly and to mix up all the spices.


Transfer to a mixing bowl along with the grated carrot and mushroom.


Add the parmesan, oat flour and the egg and mix it all up.


Form into patties and lightly fry in coconut oil for about 1 to 2 minutes per side.


Transfer patties to a baking tray (lined with a sheet of baking paper) and bake for about 20 minutes or until golden brown.
