Chocolate Zucchini Muffins

  • 1 cup buckwheat flour
  • 1 cup almond meal
  • 1/2 cup raw cacao powder
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 zucchini grated
  • 3 eggs
  • 1/4 cup olive oil
  • 1/2 cup raw organic honey
  • 1 tbsp lemon juice


  • pre-heat your oven to 185 degrees
  • mix the dry ingredients
  • mix the wet ingredients including the zucchini
  • mix both wet and dry ingredients together
  • spoon into a lined muffin tin
  • bake for 18-25 mins
