Healthy Banana Bread

Who doesn’t love a slice of banana bread?

…. Or 2 or 3 or even 4 were my kids are concerned.

Here is my healthier version; delicious, moist and oh-so-moreish! Feel free to fold in some nuts of choice or even raw cacao nibs after mixing in the flour for some added texture, my kids like it plain so I make it this way.

Also works as a lunchbox filler, chuck in a few slices for breakfast or as a healthy treat – if your school is a nut free zone, sub the almond milk with oat milk, rice milk or even normal milk.

Healthy Banana Bread

Serves: 1 loaf Cooking Time: 1 hour

Ingredients

  • 3 bananas (mashed) + 1 (halved) for the top of the loaf
  • 1/3 cup coconut oil (melted)
  • 1/3 cup maple syrup
  • 1/3 cup milk of choice (I used almond milk)
  • 2 eggs
  • 250g wholemeal spelt flour
  • 1 tsp bicarbonate of soda
  • pinch cinnamon
  • 1/2 tsp vanilla beans (from vanilla pod)
  • Black and golden linseed to sprinkle on the top

Instructions

Mash the bananas and set aside

In a mixing bowl, whisk together the coconut oil, maple syrup, milk and eggs

Add the banana, cinnamon, bicarbonate of soda and the vanilla beans and whisk again

Slowly add the flour and continue to mix until smooth

Add into a silicone loaf mold, brush the two banana halves with maple syrup and place on the top

Sprinkle with the linseed and pop into the oven for about 45 minutes at 180 degrees

Allow to cool before slicing and serving
