Juicy Orange Chia Seed Pudding

Oranges are now in season! I have been receiving these beautiful Organic Tarocco Oranges in my weekly InCampagna Malta delivery and have been meaning to make them the star of my breakfast for a while now. Today I came up with the idea of pairing these juicy Oranges with some Chia Seeds to create a delicious pudding. The fibre, protein and omega 3 fatty acids from the Chia Seeds and the Vitamin C from the oranges make for a perfect healthy breakfast. Make this on Sunday and have your breakfast till Wednesday sorted. You can even make them in jars and pop on a lid for a breakfast on-the-go option!

Serves: 3 Cooking Time: 15 minutes

  • 2 juicy large oranges (I used Tarocco Organic Oranges from InCampagna Malta)
  • 200ml coconut milk
  • 1 teaspoon raw honey (I used Organic Sulla Blossom Honey from InCampagna Malta)
  • 1 teaspoon grated ginger
  • 1⁄2 teaspoon cinnamon
  • 5 tablespoons chia seeds
  • *Yoghurt of choice (For the topping)
  • *Orange pieces (For the topping)
  • *Fresh mint (For the topping)
  • *Drizzle raw honey (For the topping)

Pick out seeds from oranges, if any.

Add all the ingredients, except for the chia seeds to a blender and blend until smooth.

Transfer liquid to a mixing bowl and add the chia seeds.

Mix for a minute or so and leave to stand for about 10 minutes then mix again.

Transfer to 3 containers, cover and leave in fridge overnight to set.

In the morning top each container with a tablespoon of yoghurt, orange segments, fresh mint and a drizzle of honey to finish.
