Lamb Kofta & Kale Tabbouleh

  • 500g lamb mince
  • 1 tbs sumac
  • 1 tbs thyme
  • 1 tbs chopped mint
  • 1 tbs chopped pistachio’s
  • Zest of lemon
  • Chilli (optional)
  • 1 tsp olive oil


  • Combine all ingredients except oil in a bowl
  • Form into small sausages
  • Heat oil in pan and cook kofta turning as needed



  • 1 cup finely chopped kale
  • ½ cup finely chopped mint
  • ½ cup finely chopped parsley
  • 1 cup cooked quinoa
  • 1 tbs olive oil
  • Juice of 1 lemon
  • 1 tsp cumin
  • 1/4 tsp salt


  • Place Kale and olive oil  in a bowl and rub the oil into the kale to soften
  • Add all other ingredients and mix to combine



  • 2 tbsp tahini
  • 1 clove garlic crushed
  • Juice of ½ lemon
  • Pinch of salt
  • Water


  • Add all ingredients and mix to a paste
  • Add water until  a runny consistency is achieved.
