My Organic Week Planner Delivery

I’m not much of a planner, I’d like to be though – It’s obvious that the more you plan, especially when it comes to food and cooking, the easier and less stressed your week will be. Not to mention less waste both in terms of food and time. Every food item you’ve bought has a purpose and you’ve freed up some space in your mind to focus on other things (God knows there’s enough to think about every day, especially when you have kids!)

So here’s me trying to get organized …

To minimize shopping time, I often order a 14kg box of organic fruit and veg from The Farmer’s Deli. I go for the “Organic Weekly Planner” as I find it serves my family well – there’s 4 of us!

This week I got the following items ….

Vegetables; Red Cabbage, Butternut Squash, Potatoes, Onions, Garlic, Carrots, Courgettes, Tomatoes, Fennel, Avocado, Rucola and Corn Salad

Fruit; Bananas, Apples, Pears, Kiwis, Oranges, Lemons, Mandarins and Grapes

Here’s what I’m thinking this week’s menu will look like …

Monday we’ll start off with a Red Cabbage and Carrot slaw with Sesame seeds and an Asian dressing. The perfect side dish to some lovely white grilled fish.

Tuesday calls for some Lentil and Butternut Squash Dahl

On Wednesday I’m thinking stuffed Zucchini with some roast potatoes and a side of Rucola, tomato and Avocado salad.

I’m already looking forward to Thursday, I’m going to try something new … wholemeal spaghetti with roasted fennel, garlic breadcrumbs, lemon and ricotta … honestly, how good does that sound?

Friday already, one large pot of Minestrone using the left over veg and a variety of pulses

Apart from all of that, I’m going to be making some of my signature “lunchbox-friendly” Apple and Banana muffins to stock up the freezer, a whole lot of smoothies for home and to send to school and there should also be fruit left over to pack into lunchboxes.

Oh and one more thing, I’m going to be recipe testing a healthy “Apple and Pear crumble” using oat flour. I’ll keep you posted on how this one goes.
