Overnight Oats

I’m always on the look out for new healthy breakfast ideas so I was very excited to stumble across the 6 Day Healthy Breakfast Challenge last week, a collaborative challenge hosted by Flavours for Health and Noberasco Malta

The challenge involved creating a healthy breakfast using 6 samples of the Purition Protein Powder range and a selection of dried super fruits from Noberasco – I went with overnight oats, something you can prepare the night before, as my mornings are usually quite hectic.

These Purition powders have absolutely “no nasties” and are made with clean and natural ingredients. My favourite was the Raw Vegan Hemp Chocolate Powder, here’s a peek at it’s ingredients;

  1. EU grown hemp
  2. Golden Linseed (Flax)
  3. Sunflower Kernels
  4. Almonds
  5. Coconut
  6. Cocoa 8% (chcocolate only)
  7. Chia Seeds
  8. Sesame Seeds
  9. Pumpkin Seeds
  10. Inactive Nutritional Yeast
  11. Psyllium Husk (Fibre)
  12. Apple Pectin (Fibre)
  13. Stevia

My favourite of the Noberasco range were the Maqui and Aronia Berries both packed with nutrients and rich in anti-oxidants.

So you can see how adding this combination of products to your breakfast routine would surely guarantee a nutritious start to your day! Protein oats (Proats) are great as pre-gym fuel and this breakfast will keep you feeling super charged and full till lunchtime. As I said it can be made-ahead, which saves you time and hassle come morning!

Here is my recipe for a killer overnight oat breakfast; simple, nutritious and above all delicious ….

Overnight Oats

Serves: 1 Cooking Time: 10 minutes

Ingredients

  • 1/2 cup medium flaked oats (you can use whole rolled oats but I prefer the final texture of the medium flaked oats)
  • 1/2 cup unsweetened almond milk (you can use any milk of your choice)
  • 20g Purition Raw Vegan Hemp Chocolate Powder
  • 1 teaspoon raw honey or maple syrup (and some for drizzling to finish)
  • Dollop dairy-free Coconut Yoghurt (Greek yoghurt would work well too)
  • 1 tablespoon almond butter
  • Banana and fresh berries (or any other preferred fruit toppings)
  • Sprinkle of Maqui Noberasco berries

Instructions

Pour almond milk into a glass container or bowl, add teaspoon of honey and Purition Powder and mix well

Add the oats and mix again, making sure that all the oat flakes are immersed in the almond milk

Cover and leave in the fridge overnight (or for at least 6 hours)

Top with yoghurt, almond butter, fruit and a drizzle of honey to finish
