Quinoa Bake with Fennel, Leek and Kale

Lots of organic Fennel in my InCampagna box this week, the idea was to make a fennel gratin but I wanted more of a substantial dish, a main rather than a side – in comes the quinoa!

So I’m thinking a quinoa bake with a fennel gratin on the top – perfect!

Quinoa Bake with Fennel, Leek and Kale

Serves: 4 Cooking Time: 1 hour


  • 3 Fennel bulbs (InCampagna)
  • 3 Leeks (InCampagna)
  • 2 cloves Garlic
  • Handful of Kale leaves (InCampagna)
  • 250g Quinoa
  • 1 veg stock cube
  • Fresh Thyme
  • Zest of 1 lemon (InCampagna)
  • 6 tbs grated Parmesan
  • 1 tbs Mustard
  • 1/2 tsp chilli powder
  • 1/4 cup quinoa "breadcrumbs"
  • Salt and Pepper
  • Olive oil
  • 200g greek yoghurt
  • 1 organic egg



Start by preparing the fennel - cut off the stalks and slice into wedges. Place on a baking tray with some salt and pepper and brush with olive oil, cook for about 30 minutes. (Set some fennel aside and chop into small pieces for quinoa mix)


While these are in the oven prepare the quinoa - rinse thoroughly and cook with stock cube in one part quinoa, two parts water for about 15 minutes.


Bring a pot of water to the boil and blanch the kale for about 2 minutes with salt then remove to a bowl of cold water and drain. Cut the Kale into thin strips.


For the quinoa "breadcrumb" mix - in a small bowl add the quinoa "breadcrumbs", thyme, some of the lemon zest, mustard, chilli powder, 2 tablespoons of the Parmesan and a splash of olive oil. Mix this altogether.


In a cast iron dish, add some olive oil and gently fry the garlic, leeks, chopped fennel, kale, thyme and some lemon zest. After a few minutes add the cooked and drained quinoa to the mix and set aside to cool. Once cool, add the yoghurt, egg and 4 tablespoons of the Parmesan - mix well.


Place the fennel wedges on top of the quinoa base and sprinkle the quinoa "breadcrumb" mix on top.


Place in the oven for another 20 minutes or so and then allow to cool for a while before serving.
