Sweet Potato & Black Bean Burger

Sweet Potato & Black Bean Burger

Serves: Makes 6 burgers Cooking Time: 40 mins

Ingredients

  • 2 sweet potatoes
  • 400g tin of black beans
  • 90g red lentils
  • handful of fresh parsley
  • 2 tablespoons sundried tomato mince
  • 30g quinoa flour
  • 1 teaspoon cayenne pepper
  • 1 teaspoon oregano
  • 1 clove garlic (crushed)
  • pink himalayan salt to taste

Instructions

Cut up sweet potato into chunks and boil in water until soft, drain and mash

Rinse your lentils until water comes out clear and boil for about 15 mins

Drizzle a tiny bit of extra virgin olive oil into a pan and gently fry the garlic until it starts to brown, add the black beans, oregano and cayenne pepper and gently heat whilst mashing the beans with the back of a wooden spoon

In a mixing bowl, mix all ingredients by hand until mixture is firm and let it cool (be sure to strain the lentils properly to remove all water)

Line an oven tray with baking paper and form the mixture into patties

Bake for about 15 minutes at 180 degrees each side (or until top side starts to brown and then flip)

Notes

You can eat the patties with any side that you prefer, I opted for a wholegrain, multi seed bun and topped it with some baby spinach, tomatoes and a drizzle of Tahini.
