Twisted Veggie Chili

There’s nothing like a home made pot of Chili … today’s version is a twist on the usual because a) it’s veggie b) I’m using a trio of veg that aren’t your normal go to chili veg and c) I’ve added lentils and introduced black beans …. and guess what? It works!

I made this for all the family so I kept it mild but feel free to crank up the heat by adding some fresh chilies if you like it hot. Don’t forget to slice up some avocado and a wedge of lime to serve. I like to make a yogurt sauce to drizzle on top as well which is basically made up of yogurt, lemon juice, pink salt, pepper and garlic powder.

Twisted Veggie Chili

  • 200g brown lentils
  • 1 x 400g tin Black Beans
  • 1/2 Butternut squash (diced)
  • 1 courgette (diced)
  • 2 carrots (diced)
  • 2 cloves garlic (minced)
  • 1 organic veg cube
  • 350g cherry tomato passata
  • 1 bay leaf
  • 1 tsp oregano
  • 1/2 tsp coriander
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tablespoon apple cider vinegar
  • handful fresh coriander
  • 1 lime (for serving)
  • 2 x Avocado (sliced for the side)
  • Organic yogurt, lemon, pink salt, pepper and garlic powder (to drizzle on top)



In a Dutch oven over low to medium heat, add a good glug of olive oil and the minced garlic and let it cook for a couple of minutes.


Add all the diced vegetables and cook for another 8 minutes or so with the oregano, coriander powder, cumin, chilli powder and salt and pepper.


Add the tomato passata and allow to cook for another couple of minutes whilst stirring the veg through.


Add about 500ml of hot water, a veg stock cube and the bay leaf.


Throw in the lentils (after rinsing), stir and then cover the pot and let it cook for about 30 minutes.


Add the black beans, turn down the heat and let it cook for a final few minutes.


Add the apple cider vinegar and the fresh coriander and give it a good stir before serving.


Serve with slices of avocado, a wedge of lime, some more fresh coriander and some yogurt sauce on the side for drizzling on top.
