Vegan Strawberry Cheesecake

My son, Eli, loves strawberries and goes crazy for Strawberry Jam but I refuse to buy it for him due to its high sugar content. By sheer luck, I recently came across a healthier option in the form of Strawberry Chia Jam from Honest – a lovely local business venture of handcrafted treats. To my relief, Eli loves this healthier version just as much and to celebrate this little victory, I have been inspired to create the following raw treat!

Vegan Strawberry Cheesecake

Ingredients

  • FOR THE BASE:
  • 125g almonds
  • 20g raw cacao nibs
  • 25g desiccated coconut
  • 4 x pitted medjool dates
  • 2 tablespoons coconut oil
  • FOR THE TOP LAYER:
  • 1 1/2 cups cashews
  • 4 tablespoons maple syrup
  • 120g strawberries
  • 2 tablespoons strawberry chia jam (I used the one from the Honest range)
  • 2 tablespoons lime juice
  • seeds from 1 vanilla pod
  • **Some extra sliced strawberries to decorate the top

Instructions

Add all the ingredients for the base layer into a food processor and blend until smooth.

Press the mixture into the individual moulds or larger mould that you decide to use, set aside and freeze.

Place the cashews into a food processor and blend for a couple of minutes. Then add all the other ingredients except for the chia jam and blend again until smooth. Then fold the jam into the mixture.

Bring the moulds out of the freezer and top with the next layer and freeze again for at least 40 - 45 minutes (make sure the mixture is firm before removing from the freezer)

Top with the fresh strawberry slices and serve straight away.

Notes

You can use individual silicone moulds to make these, in which case this recipe will yield 12 small portions or you can opt to use a silicone loaf mould and slice after freezing into strips or bite-size squares. If you don't use all of the servings, store the rest in the freezer. And finally, if you decide to make a whole "loaf" slice the loaf before topping with the fresh strawberry slices - it makes it easier to handle.
